  • 1 cup of yellow lentils
  • 2 tablespoons of olive oil

  • ¼ teaspoon of cardamom

How To:

  1. Peel the sweet potatoes and cut into 1-inch cubes.
  2. Peel and core the apple and cut it into small pieces.
  3. Boil 2 cups of water in a saucepan and add the lentils.
  4. Bring the lentils to boil and reduce the heat. Simmer the lentils on low heat for 20 to 30 minutes, until the lentils are soft.
  5. In another saucepan, insert a steaming basket and add 1 cup of water.
  6. Place the sweet potato and apples in the steamer basket and steam for 20 minutes or until the sweet potatoes are tender.

  • ¼ cup of olive oil
  • A pick of spices like cinnamon, nutmeg or cardamom

How To:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Peel the sweet potatoes and cut them into strips.
  3. In a mixing bowl, add olive oil and spices.
  4. Transfer the sweet potato strips to the bowl and toss to coat well.

  • ¾ cup of white grape juice
  • 1 tablespoon of fresh rosemary
  • 1½ teaspoons of thyme leaves
  • 3 tablespoons of butter
  • 2 tablespoons of grated Parmesan cheese
  • 1 teaspoon of salt
  • ¾ teaspoons of black pepper

How To:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Peel the sweet potato and cut into half. Cut half the sweet potato and cut into ¼ inch cubes.
  3. Cut the remaining sweet potatoes into 1-inch cubes.
  4. Toss the sweet potato cubes in 1 tablespoon olive oil and roast for 30 minutes. Puree in the food processor with 1/4 cup of chicken stock.
  5. In a saucepan, heat three tablespoon of oil and sauté the onions and small diced sweet potatoes over high heat. Cook for 3 minutes, until it is soft.
  6. Add the rice and garlic and cook for 3 minutes, frequently stirring.
  7. Stir in the white grape juice and cook until completely absorbed.
  8. Then add the stock, ½ cup at a time. Keep doing the same until the stock is used up.
  9. Add sweet potato, thyme, rosemary, thyme, butter, Parmesan cheese and simmer on low heat for 10 minutes or until the risotto is soft.
  10. Season with pepper and serve.

13. Sweet Potato Soup:

  • 1 ½ cups of cooked sweet potatoes
  • 1 tablespoon of flour
  • 1 tablespoon of unsalted butter
  • 1 ½ cups of chicken broth

  • 1/8 teaspoon of ground cinnamon
  • 1/8 teaspoon of nutmeg powder

  4. Shape the mixture into nuggets or square and place on a baking tray.

How To:

  4. Then place the diced apples in the squash holes.
